I'd rather have Coby White on this team at $22 million a year than Daniel Gafford at $18.  (I have no idea what it would take.  That's the front office's job to be plugged in.)

Agreed. And really, all you have to do is avoid paying White (or anyone) more than they'll be worth a couple of years down the road. How someone fits on a team changes quickly, as we've seen, but good players are good players. Some people don't think Coby White is a good player, and that opinion is valid. I just don't share it, personally. There is definitely a number that's too high for him, sure, but I don't see a lot of guys bolting to cap space teams these days, so it kind of seems like the Mavs just need to start negotiating a bit better at these contract points.
