I think it's fair to wonder whether a better trade could've been had, but what I think you're missing is that they (the Mavs, GM and coach) didn't like or want Grimes around anymore. When he refused the deal (and by extension, the role they wanted for him), they felt strongly enough (rightly or wrongly) to get rid of him.
In other words, no, I don't believe the emboldened part above is true. Like, at all. I don't know that they'd have even offered the QO, tbh. It seems like they'd had enough of him. If they had kept him around on the QO, I think he'd be right where we think Martin will be, trapped behind Flagg, Thompson, Christie, Marshall AND Exum in that 2-3 position range.
